Chilean Wagyu Beef Flank Steak Bavette
Unctuous, intensely rich flavours and creamy, tender textures all come together in this beautifully marbled wagyu from Chile.
Flank Steak Bavette – also called “Bavette de Flanchet” in French – is a fantastic versatile cut of meat, full of flavour and extremely tender. A relatively long and flat cut, it can be grilled, pan-fried, broiled, or braised. It also makes a delicious standby for steak sandwiches and weeknight dinners.
How to prepare your bavette
Ingredients:
• 1kg Chilean Wagyu flank steak
• 2 tbsp sea salt
• 1 tbsp olive oil
• 2 tbsp unsalted butter
• 2 cloves garlic (crushed)
• 1 sprig rosemary or thyme (optional)
1. Prepare the Steak
• Remove the steak from the fridge 1 hour before cooking.
• Pat dry and season both sides generously with sea salt.
2. Choose Your Cooking Method
Option 1: Cast Iron Pan & Oven
1. Preheat the oven to 160°C.
2. Heat a cast-iron pan over high heat with olive oil.
3. Sear the steak for 2–3 minutes per side until a golden crust forms.
4. Transfer to the oven and cook for 5–10 minutes, until the internal temp reaches:
• Rare: 48–50°C
• Medium-rare: 52–54°C
• Medium: 55–58°C
5. Rest for 10 minutes, then slice thinly against the grain.
Option 2: Charcoal or Gas Grill
1. Preheat the grill to high heat (250°C).
2. Sear over direct heat for 2–3 minutes per side to develop a crust.
3. Move to indirect heat and cook for 5–7 minutes (until internal temp reaches desired doneness).
4. Rest for 10 minutes, then slice thinly against the grain.
Option 3: Sous Vide & Sear
1. Vacuum seal the steak and sous vide at 54°C for 2 hours.
2. Remove from the bag, pat dry, and sear in a hot pan with butter for 1 minute per side.
3. Rest for 5 minutes, then slice against the grain.
Serving Ideas:
1. Chimichurri Steak – Serve with a fresh chimichurri sauce (parsley, garlic, olive oil, vinegar).
2. Steak Tacos – Slice thinly and serve in warm tortillas with avocado, lime, and salsa.
3. Grain Bowl – Pair with quinoa, roasted veggies, and a tangy vinaigrette.
4. Classic Steak & Fries – Serve with crispy homemade fries and garlic butter.
5. Asian-Style – Slice and serve with soy-ginger glaze over steamed rice.

The lush landscapes and rich wildlife are the perfect backdrop to the rearing of the renowned Mollendo F1 Wagyu.
Really great marbling on this meat. It was quite tender as well. Don't really see why I'd spend more for a Sirloin when this does the trick.
