Wagyu Chilean Beef Delmonico Steak
Our Delmonico Steak is another marvellous sharing option. Coming from the ribeye end of the chuck eye roll, a heavily marbled area of the cattle, it showcases very similar eating characteristics to a ribeye steak: very tender, great marbling and complex flavours.
A reversed seared cooking method - first inside the oven at low temperature before searing the outside - will allow this big steak to be served medium rare with a nice a stunning crust. Needless to say, this beast will also be a king on your BBQ!
How to prepare your delmonico steak
Ingredients:
• 200g Chilean Wagyu Delmonico steak
• 1 tsp sea salt
• 1 tbsp olive oil
• 1 tbsp unsalted butter
• 1 clove garlic (crushed)
• 1 sprig rosemary or thyme (optional)
1. Prepare the Steak
• Remove the steak from the fridge 30–40 minutes before cooking.
• Pat dry and season with sea salt.
2. Choose Your Cooking Method
Option 1: Cast Iron Pan & Oven
1. Preheat the oven to 160°C.
2. Heat a cast-iron pan over high heat with olive oil.
3. Sear for 2 minutes per side until a crust forms.
4. Transfer to the oven and cook for 5–7 minutes (until internal temp reaches 52–54°C for medium-rare).
5. Rest for 5 minutes, then serve.
Option 2: Charcoal or Gas Grill
1. Preheat the grill to high heat (250°C).
2. Sear over direct heat for 2 minutes per side to get a crust.
3. Move to indirect heat and cook for 5 minutes (until internal temp reaches 52–54°C).
4. Rest for 5 minutes, then slice and serve.
Option 3: Sous Vide & Sear
1. Vacuum seal the steak and sous vide at 54°C for 1 hour.
2. Pat dry, then sear in a hot pan with butter and garlic for 30 seconds per side.
3. Rest for 5 minutes, then serve.
