Espelette Chilli Pepper Purée by Terre Exotique
Terre Exotique’s Espelette chilli pepper purée brings a unique, smoky, and slightly citrusy flavour to various dishes. Originating from the Basque town of Espelette in South-Western France, this mild, fruity pepper has been a key element of local cuisine since its introduction to Europe in the 16th century. Protected by a PDO (protected designation of origin), Espelette peppers are known for their nuanced taste and moderate heat. Terre Exotique’s purée, blended with vinegar and salt, is versatile: Ideal with meat, cheeses and to flavour sauces.

Recipe 1: Espelette Chilli Glazed Chicken Breasts
Ingredients:
• 2 chicken breasts
• 2 tbsp Espelette chilli pepper puree (Terre Exotique)
• 1 tbsp honey
• 1 tbsp olive oil
• 1 clove garlic, minced
• Salt and black pepper to taste
Instructions:
1. Preheat your oven to 400°F (200°C).
2. In a small bowl, mix the Espelette chilli pepper puree, honey, olive oil, and minced garlic.
3. Season the chicken breasts with salt and black pepper.
4. Brush the chilli glaze evenly over both sides of the chicken breasts.
5. Place the chicken on a baking tray lined with parchment paper and bake for 20–25 minutes or until the chicken is fully cooked and slightly caramelized.
6. Let the chicken rest for a few minutes before serving. Enjoy with your favourite side dish!
Recipe 2: Spicy Beef Skewers with Espelette Chilli Marinade
Ingredients:
• 500g beef steak, cut into 1-inch cubes
• 2 tbsp Espelette chilli pepper puree (Terre Exotique)
• 2 tbsp soy sauce
• 1 tbsp lemon juice
• 1 tbsp olive oil
• Salt to taste
Instructions:
1. In a bowl, combine the Espelette chilli pepper puree, soy sauce, lemon juice, olive oil, and a pinch of salt.
2. Add the beef cubes to the marinade and toss to coat well. Let it marinate for at least 30 minutes in the refrigerator.
3. Preheat the grill or a grill pan over medium-high heat.
4. Thread the marinated beef cubes onto skewers.
5. Grill the skewers for 2–3 minutes on each side, or until they reach your desired level of doneness.
6. Serve the skewers hot with a squeeze of lemon and a simple salad.
