Chilean Wagyu Alcatra Steaks

"Alcatra" in Portuguese refers to the Heart of Rump. "Picanha" (rump cap) and the "Maminha"(tri-tip) are the other two parts of the rump. It produces high quality, juicy, tender steaks. Whilst appearing leaner than other Wagyu cuts, it retains all the Wagyu experience. In our opinion, Wagyu Alcatra is better than the majority of non-Wagyu striploin and ribeye steaks.

How to prepare your alcatra steaks

Ingredients:
• 2 Chilean Wagyu Alcatra steaks (200g each)
• 1 tbsp sea salt
• 1 tbsp olive oil
• 1 tbsp unsalted butter
• 1 clove garlic (crushed)
• 1 sprig rosemary or thyme (optional)

1. Prepare the Steaks
• Take the steaks out of the fridge 30–40 minutes before cooking.
• Pat dry and season generously with sea salt.

2. Choose Your Cooking Method

Option 1: Cast Iron Pan & Oven
1. Preheat oven to 160°C.
2. Heat a cast iron pan over high heat with olive oil.
3. Sear the steaks for 2 minutes per side until a golden crust forms.
4. Add butter and garlic, baste for 1 minute.
5. Transfer to the oven and cook for 5–7 minutes (until internal temp is 52–54°C for medium-rare).
6. Rest for 5 minutes, then slice against the grain.

Option 2: Charcoal or Gas Grill
1. Preheat the grill to high heat (250°C).
2. Sear over direct heat for 2–3 minutes per side.
3. Move to indirect heat and cook for 5–7 minutes (until internal temp reaches 52–54°C).
4. Let the steaks rest for 5 minutes, then slice and serve.

Option 3: Sous Vide & Sear
1. Vacuum seal the steaks and sous vide at 54°C for 1.5 hours.
2. Remove from the bag, pat dry, and sear in a hot pan for 1 minute per side with butter.
3. Rest for 5 minutes, then slice against the grain.

Hmm, disappointingly coarse texture

Never had any sort of Wagyu and chose this as a sensible price. Cooked quickly and served rare. Strong taste but was disappointed at the very coarse fibres and rather more sinew than expected. Generally disappointed and feel like 36 day aged Angus (we like the short fibres of an Angus) from the local butcher is much better. Basically, not to our taste. Sorry. We'll stick with the Iberico pork which is excellent.

Great steaks for a mid week meal. They arrived in great condition & in a good quality gold & silver foil vacuum pack.
Chilean Wagyu is worth it as well.
