Chimichurri Butter by SUBLIME BUTTER
It is said that the most Argentine of sauces is so named after its jumbled methodology: Chimichurri, apparently equates to "a mix of things in no special order". Well, that may be true. But the output is special indeed.
The presence of oregano in the No. 17 adds a herbaceous headiness, contested only by the earthen warmth of ground coriander and the piquant ordinance of lemon and garlic. Like its raw namesake, this butter can be spread, drizzled, and smeared over any savoury dish your stomach desires; such is the versatility of the green sauce.
