Freedown Hills Olive Fed Wagyu Beef Denver Steak

Denver Steaks, also known as chuck steaks, are cut from the underblade muscle in the chuck roll (shoulder). Although lesser-known than ribeye or striploin, Denver steaks will often be more intensely marbled which helps give these steaks a glorious depth and intensity of flavour.  As with all of our Freedown Hills Wagyu Beef, the use of the special olive feed works to boost the umami taste and increase the tenderness.

How to prepare your denver steak

Ingredients:
• 230g British Wagyu Denver steak
• 1 tsp sea salt
• 1 tbsp olive oil
• 1 tbsp unsalted butter
• 1 clove garlic (crushed)
• 1 sprig fresh rosemary or thyme (optional)

1. Prepare the Steak
• Remove the steak from the fridge 30–40 minutes before cooking.
• Pat dry with paper towels.
• Season generously with sea salt.

2. Choose Your Cooking Method

Option 1: Cast Iron Pan & Oven
1. Preheat oven to 160°C.
2. Heat a cast iron pan over medium-high heat with olive oil.
3. Sear for 2 minutes per side until browned.
4. Add butter, garlic, and rosemary, and baste for 1 minute.
5. Transfer to the oven and cook for 5–7 minutes (until internal temp reaches 52–54°C for medium-rare).
6. Rest for 5 minutes, then slice and serve.

Option 2: Charcoal or Gas Grill
1. Preheat grill to high heat (250°C).
2. Sear over direct heat for 2–3 minutes per side.
3. Move to indirect heat and cook for 5–7 minutes, flipping once (until internal temp is 52–54°C).
4. Rest for 5 minutes, then slice against the grain.

Nestled in bucolic Yorkshire, the Scurf Dyke Farm is the home to our very own British Freedown Hills F1 Wagyu.
Surrounded by rolling hills, verdant pastures, and quaint villages, this region epitomises the charm of the English countryside.
The farm lies on the south-eastern border of the Yorkshire Wolds with the North Sea a mere few miles to the east. Its lush fields provide most of the herd’s needs. As the cows are weaned of grass, the farm-grown grains, cereals and maize silage, combined with the locally sourced olive pieces, are introduced to their diet. The end result is an exceptional British beef adorned with remarkable umami undertones and a delicate tenderness.
