This technique allows for even cooking and significantly reduces cooking time, making it a popular choice for roasting or grilling. By spreading the chicken flat, the skin crisps up beautifully, and the meat remains juicy and flavourful. Spatchcocking also facilitates easier seasoning, as marinades or rubs can be applied more evenly across the surface. This method is perfect for creating a quick, succulent, and visually appealing dish.

How to prepare your spatchcock chicken

Spatchcock Chicken Recipes (Using Different Heat Sources)

1. Oven-Baked Spatchcock Chicken

Temperature: 200°C
Cook Time: 50-60 minutes
1. Preheat Oven: Set to 200°C.
2. Season: Rub chicken with olive oil, garlic, salt, pepper, and your favorite herbs.
3. Prepare Tray: Place chicken flat on a baking sheet, skin-side up.
4. Bake: Cook for 50-60 minutes, basting with juices halfway through.
5. Rest: Let it sit for 5 minutes before serving.

2. Grilled Spatchcock Chicken

Temperature: 180-200°C
Cook Time: 45-50 minutes
1. Marinate: Use a mixture of lemon juice, olive oil, and garlic. Let it sit for 2 hours.
2. Preheat Grill: Ensure grill temperature is 180-200°C.
3. Grill: Place chicken skin-side down for 10 minutes.
4. Flip & Continue Cooking: Cook for 35-40 minutes, flipping occasionally.
5. Check: Ensure the internal temperature reaches 75°C.

3. Pan-Seared Spatchcock Chicken

Stovetop Equivalent Heat: 200°C
Cook Time: 25-30 minutes
1. Heat Pan: Add oil to a large skillet and heat to medium-high (about 200°C).
2. Sear Chicken: Place chicken skin-side down for 10-12 minutes until crispy.
3. Flip & Reduce Heat: Turn chicken over, cover, and cook for another 15-18 minutes.
4. Rest: Allow 5 minutes to rest before slicing.

4. Air-Fried Spatchcock Chicken

Temperature: 190°C
Cook Time: 40 minutes
1. Season: Coat with a mix of paprika, garlic powder, olive oil, salt, and pepper.
2. Preheat Air Fryer: Set to 190°C.
3. Cook: Place chicken skin-side up for 20 minutes.
4. Flip: Turn and cook for another 15-20 minutes.
5. Rest: Let it sit for 5 minutes before cutting.

5. Barbecued Spatchcock Chicken

Temperature: 180-200°C (Indirect Heat)
Cook Time: 45-60 minutes
1. Prepare BBQ: Heat one side to 200°C, leaving the other side unlit.
2. Season: Rub with BBQ seasoning or a smoky marinade.
3. Cook Indirectly: Place chicken on the cooler side, skin-side up.
4. Finish on Direct Heat: Sear on the hot side for the last 5-10 minutes.
5. Serve: Ensure internal temperature is 75°C before serving.
