Chilean Wagyu Beef Tri Tip Maminha
Unctuous, intensely rich flavours and creamy, tender textures all come together in this beautifully marbled wagyu from Chile.
Like the Rump Cap Picanha, the Tri Tip Maminha is another cut of beef beloved in Brazil. This cut has a triangular shape and comes from the bottom of the rump. Wonderfully marbled, it is a great versatile cut packed with incredible flavours that can be used for roasting or steaks on a barbecue (or in the oven), for tataki or even to make steak tartare.
How to prepare your tri tip
Ingredients:
• 1.4kg Chilean Wagyu Tri-Tip (Maminha)
• 2 tbsp sea salt
• 1 tbsp olive oil
• 2 tbsp unsalted butter
• 2 cloves garlic (crushed)
• 1 sprig rosemary or thyme
1. Prepare the Tri-Tip
• Remove the meat from the refrigerator 1 hour before cooking.
• Pat dry and season generously with sea salt.
2. Choose Your Cooking Method
Option 1: Cast Iron Pan & Oven
1. Preheat the oven to 160°C.
2. Heat a cast-iron pan over high heat with olive oil.
3. Sear for 3–4 minutes per side until a deep golden crust forms.
4. Transfer to the oven and cook for 20–30 minutes, or until internal temp reaches 52–54°C (medium-rare).
5. Rest for 10–15 minutes, then slice against the grain.
Option 2: Charcoal or Gas Grill
1. Preheat the grill to high heat (250°C).
2. Sear over direct heat for 3–4 minutes per side.
3. Move to indirect heat, close the lid, and cook for 20–25 minutes (until internal temp reaches 52–54°C).
4. Rest for 10–15 minutes, then slice against the grain.
Option 3: Sous Vide & Sear
1. Vacuum seal the tri-tip and sous vide at 54°C for 3–4 hours.
2. Remove from the bag, pat dry, and sear in a hot pan with butter for 1–2 minutes per side.
3. Rest for 5 minutes, then slice against the grain.
Serving Ideas
🍽 Traditional: Serve with chimichurri sauce and roasted potatoes.
🥗 Light Option: Pair with grilled vegetables and a fresh salad.
🍷 Rich Flavour: Serve with a red wine reduction sauce and mashed sweet potatoes.
